Vegan Southern Collard Greens—A Healthy Twist on a Southern Classic!

Ingredients
- 1.5 bunches of collard greens with their stems removed
- 4 cups organic vegetable broth
- Apple cider vinegar to taste
- Hot sauce to taste
Directions
1. Rinse leaves thoroughly
2. Stack 4 or 5 leaves on top of each other
3. Roll leaves up until it forms a tube shape
4. Slice into strips that are about half an inch wide
5. Boil the broth and add the collard greens
6. Return to boil then reduce to simmer and cover for about 10 minutes
7. Strain the collard greens
8. Season with apple cider vinegar and hot sauce to taste
